Coconut Macaroon Granola

What makes you happier than a sweet treat without the guilt? With no refined sugars and high in fiber, this healthy coconut macaroon granola is a fabulous on-the-go snack or a happy addition to any meal. Give it a go!

Ingredients:
3 cups rolled oats
1/4 cup unsweetened applesauce
1/3 cup honey
2 T coconut butter, melted
1 tsp vanilla extract
1/2 tsp coconut extract
1/4 tsp salt
1/2 cup chopped macadamia nuts
1/2 cup unsweetened shredded coconut

Directions:
Preheat oven to 325 degrees F, and line a baking sheet with parchment paper. In a large bowl, whisk the applesauce, melted coconut butter, honey, vanilla, coconut extract and salt. Next, add the oats, macadamia nuts and coconut. Spread the mixture evenly on the baking sheet. Bake for 15 minutes or until edges of granola are golden brown. Remove it from the oven and stir it up! Bake for an additional 10 minutes. Cool completely. Store it in an airtight container.

Voila! Delicious Coconut Macaroon Granola.
