Popcorn is one of our favorite go-to healthy snacks. When you ditch the butter and salt popcorn is a great low calorie, whole grain snack that adds fiber to your diet. It also has high levels of antioxidants – even more than some fruits and veggies. Let’s give it up for popcorn!
Try our Peanut Butter Popcorn recipe. Instead of using unhealthy oils, you can add some protein and good fats for a guilt free snack.
8-10 cups air popped popcorn
1 Tbsp coconut oil
1 Tbsp creamy peanut butter
1 Tbsp honey
1/4 tsp pure vanilla extract
1 Tbsp peanut butter powder (we like PB2) – optional
Preheat oven to 250 °F. Line a baking sheet with a silicone baking mat or parchment paper. Put air popped popcorn in a large bowl. Melt the coconut butter – you can use a small saucepan or the microwave. Add the peanut butter and honey. Mix until smooth. Stir in the vanilla. Drizzle the mixture over the popcorn and toss to coat evenly. For a little extra peanut butter flavor, sprinkle the peanut butter powder on the popcorn and toss. Spread the popcorn in an even layer on the lined baking sheet. Bake for 15 minutes. Remove baking sheet from the oven and let popcorn cool completely. Enjoy!
